Our Story

Why We Made Gindu

Over fifty years in the travel industry, and still inspired by the land we call home. From the contrasts of our coastline, the ancient rainforests, inspiring vistas and remote interior, we can never see enough. 

In 2020, one conversation led to another and we revisited an old idea. We'd long thought the best of Australia could be captured in a glass: its landscapes, its native botanicals, and the people we'd met making things along the way.

We started with the classic London Dry, however done the Australian way. And we did well. Picked up a few gold medals and trophies and thought, “there’s something in this.” Australia's beautiful shores have always inspired us, and from there our Coastal Gin was created, another double gold medal-winner. From there things really took off, exploring more Australian landscapes that are home to botanicals you simply can’t find anywhere else. 

So that’s Gindu. Born from a passion for travelling our own country, and celebrating botanicals from landscapes that are truly and uniquely Australian.

Our Five Landscapes

A sense of place in every bottle

Outback 

Australia’s vast interior provided the inspiration for our Australian Dry Gin. We distilled the breadth of this continent,  sourcing botanicals including Blood Limes, Old Man Saltbush, and Wattleseed to create a balanced dry gin expression.

Coast

Our Coastal Gin was our tribute to Australia's vast shoreline. We distilled botanicals as far reaching as saltbush from the Eyre Peninsula and wild rosemary from South-eastern NSW to create a gin that evokes warm sand, sea spray and coastal breezes.

Rainforest

The lush tropical forests of Far-north Queensland were the inspiration for our Rainforest Gin. Rainforest Cherries are macerated along with Small Leaf Tamarind, to create a fresh and zesty gin reminiscent of a walk under a dripping-wet forest canopy.

The Bush

Sitting by a campfire in the Australian bush with a good bush ‘cuppa’ was the inspiration for our Billy Tea Gin. Native lemongrass, Tasmanian Blue Gum, Scented Emu Bush provided tea-like notes to create a gin that is herbal, softly spiced and gently tannic. 

Australian Alps

The high country of the Snowy Mountains provided the inspiration for our latest landscape expression, Alpine Gin. Botanicals including Alpine Pepperberry, Alpine Peppermint Gum and Alpine Mint Bush created an elevated drinking experience. Warming and savoury to start, with a cooling, herbaceous finish reminiscent of a mountain stream.

Native Botanicals, beyond Juniper

A roll-call of the natives that run through the range: Old Man Saltbush, Sunrise Limes, Rainforest Cherries, Illawarra Plum, Muntries, Alpine Pepperberry, Scented Emu Bush, White Kunzea, Tasmanian Blue Gum, Wild Basil, Alpine Mint, Rainforest Lychees, Geraldton Wax and a wattle or three.

Rare, seasonal, grown by the people who know the country best.

We only take what the land can give. Wild-harvested where it should be, farmed where it should be, sourced from growers who know and respect the land. The supply chain is small, deliberate and built to last.

How we distil Gindu

We start with the landscapes housing our botanicals. Saltbush from the outback but also the coast. Same/same but wildly different. Rainforest cherries from the ancient Daintree. Some botanicals hand foraged, some come from growers who've worked the land for generations.

We distill the old fashioned way. All botanicals in the pot from the outset, gaining our signature flavours from precise cuts, chasing the heart of the spirit.

We distill clean, crisp, flavoursome and aromatic spirits you can sip neat or pour into a G&T, a Coastal Breeze, a Billy Smores. Cocktail-ready,  Bartender endorsed. 

The sense of place is still in the glass when it lands in front of you.
